Hot Artichoke Spinach Dip

This recipe was what I would call a success! I especially think that when I take it to a group gathering, and the non-GF eaters are enjoying it and asking for the recipe! :)

Hot Artichoke and Spinach Dip

1 (9oz) pkg. chopped frozen spinach, thawed
1 c. chopped artichoke hearts
8 oz. cream cheese, softened
1-2 cloves of garlic (I use roasted garlic, or from a jar)
3/4 c. fresh-grated Parmesan cheese
salt & pepper to taste

Heat the spinach, garlic, and artichokes in a large pan over medium heat, till warmed through.
Add cream cheese and stir till melted. Add Parmesan cheese and mix well.
Remove from heat, and add the salt & pepper to taste.
Serve warm, with tortilla chips, or nut and rice crackers...Yummy!
