Sesame Crackers

These crackers are adapted from Elana's Pantry....They are good with hummus or chicken salad.


Sesame Crackers
1 1/2 c. almond flour
3/4 t. sea salt
1/2 c. sesame seeds
1 egg, whisked until frothy
1 T. canola oil (or coconut oil, melted)


In a large bowl, stir almond flour, salt, sesame seeds, eggs and oil until well blended.
Line a baking sheet with parchment paper or aluminum foil. Place the dough on the baking sheet. Put another piece of parchment or wax paper over the dough and, using a rolling pin, roll the dough until it is 1/8 inch thick (or as thin as you can manage). Remove top sheet. Cut the dough with a knife or pizza cutter into 2 inch squares.
Bake at 350° for 10-12 minutes, until golden brown.

Cool and serve.
Makes about 3 dozen crackers.
