Another tasty appetizer....Hummus!

I am working on spreading out my horizons and starting to make more ethnic foods...Indian, Middle Eastern, maybe even Chinese...and this was the first thing that I could do, considering the contents of my pantry. Simple and easy, but good!


From my mom, 5-minute hummus:


1 15oz. can chickpeas, rinsed
1-2 cloves garlic
1/4 c. olive oil
2 T. lemon juice

1 t. cumin
1/4 t. paprika
salt

In food processor or blender, puree all ingredients until smooth and creamy. Add 1-2 T. water as necessary to desired consistency. This is good served with tortilla chips, or fresh veggies!
